ListCheckpoints - Stream Historical Sui Checkpoints
Stream historical Sui checkpoints over gRPC with checkpoint bounds, transaction filters, field masks, and cursor pagination.
LedgerService.ListCheckpoints runs a bounded historical scan and streams matching checkpoints. Every frame includes a watermark; the final successful frame also includes a query-end reason.

start_checkpoint is inclusive and end_checkpoint is exclusive. To continue an ascending scan, pass the last watermark cursor as options.after.

Retention and filters
Replace RECENT_CHECKPOINT with a recent checkpointHeight from GetServiceInfo. A lower bound before retained history returns OUT_OF_RANGE.
